Easy Homemade Pasta
Daunted by the thought of making your own pasta? Admittedly you’ll need a pasta maker, but you can’t go wrong with this recipe.
Serves 6- 500g extra fine semolina- 4 eggs- A splash of water- A sprinkle of plain flour.Break the eggs into the flour in a large mixing bowl.Mix together by hand ensuring all the mixture is binding together, if not add a splash of water.Knead for 3-5 minutes then wrap in clingfilm and leave in the fridge for two hours.After two hours remove from the fridge, cut into four and roughly roll out into a square using just a sprinkling of plain flour.Sprinkle your pasta maker with flour then feed the dough through the rollers starting on setting 3.After each movement through the machine fold the sheet over itself and pass through the rollers again. Repeat this process passing through the rollers on settings 5 and finally on 6.Once you’ve got your fine sheet of pasta then pass it through the linguine setting on your pasta maker.The fresh linguine is then ready to cook in boiling water for 3-5 minutes depending on amount.I made mine with left-over spaghetti Bolognese to cut down on cooking time.
